If you want to take some home with you, you can buy it already vacuum packed in AB Supermarket. Look in the refrigerated cabinets-not the deli counter & make sure you are buying Kefalonia Barrel Cheese.
Take a big piece back with you Just keep it in the fridge until you need to use it, always bring to room temp before using of course. Put the remaining piece in a Tupperware style container & cover in brine then reseal. To make the brine ....half an ounce of salt dissolved in half a pint of water, pour into the container & make sure the top of the Feta is covered, seal & put back in the fridge. It will keep like this for months.....if you can leave it alone for that long of course!!!!!
