Posidonia oceanica (eel grass or sea grass) was turned into compost quite successfully I believe, by Katerina in Katelios. It does however require a long storage time to leech out the salt.

I think the Katelios composting operation was set up by a Brit environmentalist and handed over to the turtle watchers as a funding mechanism, although I gather it became privately owned. This guy is turning seaweed into cell phone cases, luxury gift boxes and beach tennis paddles.
